Tex Mex Bake from The $5 Cookbook


Our family enjoyed another dinner from The $5 Cookbook. Scanning through the 20 different recipes in the table of contents the title “Tex Mex Bake” caught my eye. We do live in Texas, after all. And we love Mexican food.

This dish is hearty, with a touch of spice. I appreciated how quickly I was able to put it all together. My husband walked in the door and said, “Something smells good!” and that always makes me happy.


Tex Mex Bake

Kidney beans, ground beef, corn, tomatoes – and more make this one filling dinner! We added cheese before I topped it with cornbread. My daughter invited two friends over and we had plenty to feed everyone. This paired nicely with a salad and tortilla chips. We liked this dish topped with sour cream and more cheese.
