Strawberry Cookies Made with Cake Mix

Another busy day – another batch of yummy Cake Mix Cookies made by my 12-year-old. Whenever we have extra cake mix on hand, she always asks to make cookies. I’m happy to let her. Especially when she’s making delicious strawberry cookies with white chocolate chips.

I was able to snatch a couple before she bagged them up to share with her Hands and Feet youth volunteer group at our church. These cookies were amazing! Soft and chewy, sweet strawberry flavor paired with creamy white chocolate. Oh my goodness! We’ll definitely be making these again soon.

Strawberry Cookies with White Chocolate Chips

  • 1 box strawberry cake mix
  • 1 stick butter – melted
  • 2 eggs
  • 1 bag white chocolate chips

Preheat oven to 350. Prepare cookie sheet with parchment paper.

In a large bowl, combine cake mix, melted butter, eggs. Dough will be thick, you may need to use your (clean) hands to fully incorporate all the ingredients. Add white chocolate chips and mix well.

Spoon onto parchment paper and bake for 11 minutes each, until slightly browned around the edges.
