Seven of the eight members of our household have been sick this week. Mommy is the last man standing. The twins, the toddler, the tween, the teens and daddy all have the sniffles, fevers and icky coughs.
With our whole crew sick, I need a dinner I can throw in our Crock Pot and forget. Thankfully I had White Beans and Ham on our menu for this week. It’s my go-to dish for busy days. White beans, ham, carrots all come together for a hearty, low-cost dinner.
White Beans and Ham
- 1 lb dry white beans (we like Navy beans)
- 1/2 cup diced onion
- 1 cup diced carrots
- 2 cups diced smoked ham
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 large bay leaf
- water or chicken stock
- salt and pepper to taste
Soak white beans overnight in water. In the morning, drain and place in slow-cooker. Add just enough water to cover the beans. Add remaining ingredients. Stir, and cook on low for 6-8 hours until done. Check water level every couple hours and add as needed. Chicken stock may be used instead of water for a more filling dish and enhanced flavor.

This product is wonderful for soups, beans, stews, sandwiches, casseroles and more. It definitely brought our white beans up a notch.
Best served with warm, buttered bread and big glasses of iced sweet tea.
