Wednesdays are a crunch for us. We have six children to feed, dress, and get out the door before 6:15 to make it to church on time.
Dinner needs to be simple and fast. The standard chicken nuggets or spaghetti get old. Occasionally we like to mix it up. This is one of our favorite recipes for dinner in a hurry.
Sausage with Tortellini and Vegetables
- 2 Two-pack Smoked Sausage Links
- 1 Bag of Frozen Cheese Tortellini
- 2 Bags of Frozen Mixed Vegetables
- 1 Cup Sliced Onions and Red Bell Peppers
- 1 Tablespoon of Olive Oil
- Salt and Pepper to taste
Slice the smoked sausage links and pan fry in a tablespoon of olive oil in a large pan until browned.
While cooking the sausage, bring a large pot of water to boil for the frozen tortellini. In the pan with the browned sausage add sliced onion and bell pepper. To keep things simple, I use a cup of my favorite frozen mix.
Also add your family’s preferred frozen vegetable mix. We normally just add edamame. Finding edamame in a small Texas town can be difficult. The grocery store surprised me with a new blend:
We really enjoyed this new addition to our meal. I’ll be using it again in the future.
Cook frozen vegetables in the pan with the browned sausage, adding salt and pepper according to your family’s preference.
Once the water is boiling in the large pot, add the frozen tortellini and cook until done.
The tortellini will float once cooked. Drain and add to sausage and vegetables.
Dinner is served.
